Mojo Marinade

MAKES 2 CUPS

“Mojo” comes from the Portuguese word meaning “sauce” and most often pertains to a tangy Cuban marinade made from lots of garlic and citrus. It is traditionally used as a braising liquid for slow-cooked pork shoulder – perfect for making Cubano sandwiches. It works equally well for marinating pork chops, shrimp, or chicken to throw on the grill. This recipe makes enough to marinate 4 pounds of protein.

Ingredients:

  • 1/2 yellow onion, roughly chopped (about 1 cup)
  • 1 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup extra virgin olive oil
  • 2 sprigs mint, leaves picked
  • 2 sprigs oregano, leaves picked
  • 1/2 head garlic, cloves separated and peeled (about 1/4 cup)
  • 1 tablespoon orange zest
  • 1 tablespoon dark brown sugar
  • 1 tablespoon kosher salt, plus more to taste
  • 1 teaspoon pepper

Directions:

  1. Combine all ingredients in a blender and liquify. Adjust salt, to taste. Store in an airtight container in the fridge up to 3 days.
