Peaches with Late Harvest Wine Syrup & Mascarpone Whipped Cream

Serves 4-6
Ingredients
  • 6 each Peach-O-Rama Peaches, blanched
  • 3 tbsp sugar
  • 1/4 cup late harvest dessert wine
  • 1/4 cup mascarpone
  • 1 pint whipping cream dash of vanilla
  • 1 bunch fresh mint
  1. Boil enough water to cover peaches and blanch peaches for 1 minute. After blanching, cool peaches in refrigerator for 15 minutes; then rub off skins. Slice peaches and toss with 2 tbsp sugar and dessert wine. Refrigerate again for 2 hours.
  2. Mascarpone whipped cream topping: whip cream half way; add mascarpone, vanilla, and remaining sugar. Finish whipping.
  3. This dessert looks great served in a martini glass. Make sure to ladle some syrup into the glass with the peaches. Top with mascarpone whipped cream and garnish with a sprig of mint. Savor the flavor of summer and enjoy!
