Summer Peach Relish

Serves 4
Ingredients
  • 6-8 ripe Peach-O-Rama Peaches, peeled, pitted, and cut into 1/2-inch dice
  • 3 tbsp fresh lemon juice
  • 1 red bell pepper, stemmed, seeded, and cut into 1/4-inch dice
  • 2 tsp finely minced green jalapeņo pepper, or more to taste
  • 1 tbsp finely minced fresh ginger
  • 1 tbsp finely minced crystallized ginger
  • 1 tsp salt
  • 1/4 tsp ground mace
  • 1 cup golden raisins
  • 1 cup cider vinegar
  1. Place the peaches in a large heavy saucepan, and stir in 2 tablespoons of the lemon juice. Add all the remaining ingredients and toss well. Bring to a boil, stirring once. Reduce the heat to medium and simmer for 30 minutes.
  2. Remove the pan from the heat and let the relish cool to room temperature . Stir in the remaining 1 tablespoon lemon juice. The relish will thicken as it cools. Refrigerate it, covered until ready to use, up to 4 weeks.
