Asparagus with Orange Sauce

Ingredients
  • 24 fresh asparagus, medium size and trimmed
  • 2 egg yolks
  • juice of 1 orange
  • 1/2 tsp orange rind, grated
  • 4 oz butter, melted
  • 4 tbsp whipping cream
  1. Blanch the asparagus for 5 minutes in a large pot of boiling salted water. Drain and keep the asparagus warm on serving platter.
  2. Using a stainless steel bowl, whisk the egg yolks, orange juice, and grated orange rind over a double boiler until the mixture becomes foamy and thick enough to coat a spoon.
  3. Remove the bowl from the heat and slowly incorporate the melted butter. Then fold in the lightly whipped cream. Add salt and pepper to taste.
  4. Pour the sauce in a warm sauceboat and serve with the asparagus.
